An almond tree, Prunus dulcis, is grown twice over: once for the nuts and once for the bloom, which is one of the earliest and most striking flower displays in the garden year. The tree itself is undemanding — full sun, well-drained soil, not much water — but there is one condition it will not negotiate on, and getting that wrong is why some almond trees flower beautifully for years and never produce a decent crop.
Why an almond tree must have a cool winter
The single non-negotiable requirement for growing almonds is a cool winter. Almond is a deciduous tree: it drops its leaves, goes dormant, and needs a stretch of genuine winter cold before it will break that dormancy properly. Without enough winter chill, the buds wake up unevenly — flowering is thin, scattered over weeks, or barely happens at all — and a tree that does not flower properly cannot set nuts.
This is why almond suits Mediterranean, subtropical and temperate climates, and why it is at home across hardiness zones 5 to 11a. The cold end of that range, zone 5, means the dormant tree tolerates winter lows of around −29 °C (−20 °F). Almond is not a tender tree — it is a tree that wants a real winter and a hot, dry summer.
The catch sits at the other end. In a very warm, frost-free climate you may get an ornamental tree and little else. The bloom is worth having on its own, but if nuts are the aim, cool winters come first.
When almond trees bloom, and what the flowers look like
Almond blooms in spring, and in a hotter climate it moves earlier still, opening at the end of winter. It is often the first thing in flower — bare branches covered in blossom before a single leaf appears, which is exactly what makes the display so striking.
The flowers have five petals and range from white to pink, varying by tree and cultivar. They are produced in great quantity and they attract a lot of pollinators, which is not incidental: an almond in bloom is one of the earliest reliable nectar sources of the year, at a point when very little else is open.
The risk of blooming that early
Flowering before winter is truly over is a gamble the tree takes every year. Open blossom is soft tissue, and a late frost arriving after the tree has committed can destroy the flowers and cost you the entire crop for that season — while leaving the tree itself perfectly healthy. There are two practical responses: plant where late frosts are less likely, such as a slope or a sheltered spot rather than a low pocket where cold air settles overnight, and accept that in a marginal climate you will get good years and blank ones.
Pollination: why the weather at bloom time decides your crop
Bees do the pollinating. That single fact explains most of the year-to-year variation in almond crops, because bees need reasonably warm, calm, dry weather to fly — and almond blooms at the coldest, wettest end of the growing season.
A week of cold rain during full bloom can mean a light crop from a tree that flowered magnificently. You cannot control the weather, but you can avoid making it worse: do not spray insecticides while the tree is in flower, and grow other early-flowering plants nearby so there is a bee population already active in your garden when the almond opens.
Site, soil and water
Almond needs full sun — not partial, not dappled. It also needs well-drained soil; like most stone fruits it will not tolerate roots standing in water.
Water requirements are modest: a small to average amount of water. Once established, an almond is a comparatively dry-growing tree, which fits its Mediterranean character. Water young trees while they establish and during nut fill, but resist the urge to keep the ground constantly wet.
Plan for the mature size: 3–10 m (10–30 ft), at a medium growth rate. That is a full-sized garden tree, so give it room from the start.
When and how to plant an almond tree
The planting window runs from autumn through winter to spring, but the best time is narrower: after the leaves have fallen and before the end of winter.
The reason is dormancy. A leafless, dormant tree is not losing water through its foliage, so it can spend those weeks growing roots into the new soil instead of struggling to support a canopy it cannot yet supply. Plant one in leaf and you spend the first season watering it through the stress it did not need to have.
- Choose an open, sunny position with genuinely free-draining soil, avoiding frost pockets.
- Plant during dormancy — ideally between leaf fall and the end of winter.
- Keep the graft union above soil level. Buried, it can root over and you lose the benefit of the rootstock entirely.
- Firm the soil moderately, water in, and stake a young tree if the site is exposed.
- Water through the first growing season, then taper off as the tree establishes.
Expect nuts 3 to 5 years after planting.
Why almond trees are grafted
Almond is one of the fruit trees where grafting is necessary, and the best way to start is with a bought, grafted plant rather than seed.
The reason is in the kernel. Almond taste ranges from bitter to sweet, and that trait is inherited unpredictably. Raise a tree from a nut and you have no idea which end of that range you will land on — you can wait three to five years to find out that your kernels are bitter and not worth eating. A grafted tree carries wood from a known, sweet-kernelled selection, so the nuts are settled before you plant. Grafting also lets a nursery put that selection onto a rootstock suited to local soil, and it brings the tree into bearing sooner than a seedling would.
Pruning an almond tree
Prune in winter, while the tree is dormant and bare. With no leaves in the way you can actually see the framework, and the tree is not wasting energy on growth you are about to cut off.
What to remove:
- Dead branches — always, and first.
- Weak branches — wood too feeble to carry a crop or a bird. Leaving it produces growth that breaks or hangs.
- Thin, spindly growth — the twiggy congestion that shades the interior of the tree and traps damp air, which is exactly the environment pests and disease prefer.
Aim for an open canopy that light and air can move through, and keep the tree at a height you can pick from. Almond is a medium grower, so a light annual winter tidy is far better than a hard reduction every few years.
Harvest: reading the fruit correctly
An almond is not really a nut in the botanical sense, and the structure matters at harvest. What hangs on the tree is a green outer casing, inside it a brown shell, and inside that the edible seed. You are growing the innermost part of a three-layer package.
Harvest season is spring to summer, following the bloom — earlier in a hot climate where the tree flowered at the end of winter. Ripeness shows in the green casing: it dries, shrinks and pulls away from the shell, at which point the almonds are ready to come off. Dry the shelled or unshelled nuts thoroughly before storing them, or they will mould.
The work involved is nothing special — no thinning, no bagging, no special treatment. Almond is a low-fuss crop compared with most fruit.
An important safety point
Almond fruit is poisonous when it is not fully ripe, because the unripe fruit contains cyanide-producing compounds. Do not eat almonds off the tree early to test them. Wait until the outer casing has dried and split and the nuts are properly mature, and treat any strongly bitter kernel with caution rather than eating it — bitterness in an almond is the taste of exactly those compounds. This is the main genuine difficulty in growing almonds, and it is entirely avoidable by harvesting at the right stage.
What to do with a large crop
A mature almond tree produces far more than you will eat fresh. The three standard routes:
- Raw — properly ripened and dried, stored in a cool, dry place.
- Roasted — the usual treatment for a big harvest, and it keeps well afterwards.
- Beverage — almond milk, made by grinding and straining the kernels, which absorbs a large quantity of nuts quickly.
Pests and diseases
- Aphids — colonise the soft new shoots in spring, curling and weakening them. Deal with them early, and treat ants running up the trunk as a signal to look for aphids above.
- Borers — the most serious problem, because the damage is inside the wood where you cannot see it. Larvae tunnel into trunk and branches; look for small holes and sawdust-like frass. Borers overwhelmingly attack trees already weakened by drought stress, poor drainage or careless pruning wounds, so a vigorous tree is your main defence.
- Mites — thrive in the hot, dry, dusty conditions almonds are usually grown in, stippling and bronzing the leaves. Heavy dust on foliage makes them worse.
- Ants — the pest of the nuts themselves. They also farm aphids, so ant control helps twice.
Containers and indoors: the honest answer
Almond is not suitable for containers and is not a houseplant. At 3–10 m (10–30 ft) it is simply too big for a pot, it demands full sun that no indoor position can supply, and — most decisively — it needs a genuinely cool winter to flower and set nuts. An almond kept warm indoors gets none of the chill it depends on. This one belongs in the open ground.
