Harvest coincides with the season-end tuber lift already carried out for winter storage and propagation (see Propagation and Pruning, fid 24871-b04/b11): dig the clump once frost blackens the foliage in cold climates, or as growth slows in mild climates, then separate tubers meant for eating from those set aside for replanting.

The species was once cultivated as food in Mexico before selective breeding turned it toward today’s ornamental show and cut flowers, and that culinary tradition is not reflected in modern Decorative cultivars such as this one, bred for bloom form and colour rather than eating quality. Cook rather than eat raw, and start with a small tasted portion, since flavour swings from mild and nutty to bitter or resinous. No toxicity is documented, but inulin-sensitive individuals may experience bloating or digestive discomfort, as with Jerusalem artichoke. Approach this as a curiosity/marginal edible, not a dependable crop, and confirm the plant’s identity before eating any ornamental tuber.

- Slugs & snails (Deroceras / Helix spp.):
- Symptoms: Emerging shoots and tender leaves are rasped and shredded, often overnight, leaving irregular holes and silvery slime trails; a whole young plant can be lost before it establishes.

- Treatment & Management: Space plants for airflow and avoid overhead watering late in the day; remove the worst leaves; feed and water evenly to reduce stress; spray sulphur, potassium bicarbonate or a milk solution at first signs, repeating as needed.
- Grey mould (botrytis) (Botrytis cinerea):
- Symptoms: Fuzzy grey-brown rot on ageing petals, buds and damaged tissue in cool, damp, still weather; blooms turn slimy and collapse.
- Treatment & Management: Improve airflow, deadhead spent and spotted blooms promptly, and clear fallen petals; avoid wetting flowers; in persistent damp, a protectant fungicide can help, but sanitation is the main control.
- Dahlia mosaic virus (Dahlia mosaic virus (DMV)):
- Symptoms: Yellow mottling and vein-banding, pale blotches, leaf distortion and stunting; symptoms persist and worsen and cannot be cured.
- Treatment & Management: There is no treatment: dig up and destroy affected plants and their tubers so they do not seed further infection; control aphids that spread it; propagate only from known-clean stock and disinfect cutting tools.

- Poor flowering / blindness:
- Cause & Symptoms: Too much shade, excess nitrogen, drought stress or failure to deadhead gives leafy plants with few or small blooms.
- Correction Strategy: Give full sun and a balanced-to-high-potassium feed, water deeply in dry spells, and deadhead regularly; pinch young plants once to build a bushy, floriferous framework.
- Frost damage:
- Cause & Symptoms: As tender perennials, dahlias are blackened by frost; top growth collapses and tubers left in cold, wet ground can freeze and rot.
- Correction Strategy: In cold-winter areas lift and store tubers, or in milder areas mulch deeply over the crown; delay planting out until frost danger has passed.
- Root/crown rot from waterlogging:
