Mashua tubers have white flesh under a peel that can be red, white, brown, yellow, green, orange or purple, with characteristic stripe markings and oval, cone or irregular shapes. They are lifted in autumn/winter and can be eaten cooked or raw, though cooking is more typical since it softens their natural mustard-like sharpness.
