What looks like the colourful petals is really the papery calyx, and because that calyx keeps its colour long after cutting, statice is a favourite both fresh and dried – one of the best-known “everlasting” flowers. The blooms (purple, blue, pink, white or yellow) are carried in branched, flat-topped sprays held well above the rosette of foliage, from spring right through autumn.
